Inizio is owner Grant Arons’ obsessive attempt at authentic Neapolitan pizza, and he goes further than anyone else in the city to get there. The crust uses water imported from Italy for its exact pH and mineral content, along with Polselli type 00 flour, San Marzano tomatoes and real buffalo mozzarella. The Dilworth location on Park Road is the flagship.
