Chop Shop Butchery is a whole-animal butcher shop on Selwyn Avenue in Myers Park. The Asheville-born shop, founded in 2011, opened the 1,500-square-foot Charlotte location in 2024, Axios Charlotte reported.
The case holds dry-aged beef, whole-animal cuts, house-made sausages and charcuterie, all cut in house from partner farms, and staff give buying and cooking advice. Axios reported in 2024 that most of the meat came from western North Carolina farms, and the shop takes Thanksgiving preorders.
